Recipe: Apple tea loaf

Recipe: serves 12

  • 2 cups of plain wholemeal flour
  • 1 tbs cinnamon
  • 5 tsp baking powder
  • ½ cup runny honey
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (or 300g) natural plain low fat yoghurt
  • 3 medium apples, peeled and quartered (2 grated and one thinly sliced to put on top of the cake)

Pre-heat oven to 160 C.

Grease a medium sized loaf tin and line the bottom with baking paper.

Sift flour (add back remnants in the sieve). Add baking powder.

In another bowl, place oil, eggs, vanilla and yoghurt and whisk to combine. Pour these wet ingredients into the flour and mix well. Grate the two apples and add to this mixture.

Spoon into the loaf tin and place the last sliced apple onto the top of the cake. Sprinkle with extra cinnamon.

Bake for 50 minutes, test with skewer to make sure it is cooked through.

 

This would serve as a great pre-training snack!!

 

Per serve: approximately 280 calories, 6g protein, 34g carbohydrate, 13g fat, 1g saturated fat, 4g fibre, 120mg sodium
