Zucchini Slice

Zucchini Slice

Serves 19

–       1 onion, finely sliced

–       4 medium zucchini, grated

–       1.25 cups self raising flour

–       2 eggs, large

–       2 cups skim milk

–       1.5 cups light tasty cheese, shredded

–       2 tbs oregano

–       Spray olive oil

Pre heat oven to 220 C. Line two 18cm x 28cm tins with baking paper. Heat oil in frying pan and cook onion. Remove and set aside. Grate zucchini and squeeze out excess fluid. Mix zucchini, onion, oregano, cheese and flour together. Lightly beat eggs and milk in a separate bowl. Add to zucchini mixture. Pour in to tins. Bake for 40mins or until firm in centre. Leave to cool in tin.

One serve = 89 calories, 11g carbohydrate, 5g protein, 2g fat
