6 ways to get MORE vegetables in your life!
1. DOUBLE UP!
How about instead of serving up your normal ‘dosage’ of veggies or salad tonight, put DOUBLE the veggies or salad you usually have on your plate!
2. SNACKS!
Try not to think of veggies and salad as just main meal additions. Try chopping up a plate of veggies on the weekend and leaving it in the fridge. Whenever you pass by, grab a veggie! And it doesn’t have to be the same old ‘carrot and celery’ every time! eg capsicum, mushrooms, cherry tomatoes, snow peas, green beans, corn cobs, etc make great snack options.
3. SMOOTHIES!
So long as you’re not juicing, a smoothie is a viable way to increase your veggie intake! So long as the whole vegetable is included (not just the juice), you will be getting all the nutrients plus the fibre! eg try a banana, spinach, ice and cucumber smoothie as a snack!
4. STIR-FRY’S!
One of the easiest ways to increase your veggie intake is to include more stir-fry’s in your repertoire of cooking – and make sure the recipe is veggie heavy!!
5. GRATE THEM IN!
Grated vegetables go really well through so MANY recipes! Eg you could grate a carrot and a zucchini through your spaghetti bolognaise mince next time. OR you could grate zucchini and add it to apple muffins.
6. SOUPS!
One of the yummiest ways to increase your veggie intake is to include soups as main meals (along with a source of wholegrains like barley or wholegrain toast)! Or, if your main meal isn’t going to be particularly vegetable heavy one night (like a homemade pizza), you could add a vegetable soup as an entree! Soups are also a great way to get some lentils in – they go so well in a soup, and are so healthy for our gut!
